Sausage, Fig and Herb Pizza

This sausage, fig and herb pizza is definitely a little fancy, and perfect for the festive season. The savoury Italian sausage is a perfect compliment to sticky, sweet fig paste.

Ingredients

  • 1 ball of GoDough

  • 1 - 2 tbsp tomato paste, pizza sauce or passata

  • 1 tbsp of fig paste

  • 2 Italian sausage links

  • 1/4 small red onion

  • 1/2 cup shredded cheese (mozzarella for a softer flavour or sharp cheddar for an extra bite)

  • A few sprigs of fresh thyme, or 1/2 tsp dried thyme

Instructions

  1. Defrost your GoDough as per the packet directions

  2. Place a pan on medium-high heat, and squeeze the sausage out of the casing into the pan. Break the sausage mince up with a spatula into smaller pieces, and fry until browned. You won’t need oil because the sausage will release fat into the pan.

  3. While the sausage is frying, preheat your oven to 250 degrees celcius. We like to place our pizza stone or tray into the oven while it is preheating.

  4. Thinly slice your red onion.

  5. When the sausage is cooked, remove the pan from the heat or transfer the sausage to a bowl to cool slightly.

  6. Roll out your GoDough to your desired thickness - we recommend a thin, crispy style of pizza but the beauty of GoDough is, it’s up to you!

  7. When your oven is preheated, carefully take your pizza stone or tray out of the oven, and transfer the pizza dough to the tray. An easy way to do this is by rolling an edge of your dough over a rolling pin, an using the rolling pin to transfer the dough.

  8. Once you’ve transferred the dough to the sheet, the base will start cooking so work fast! Spread your tomato paste, pizza sauce or passata out on the dough with the back of a spoon, working in circular motions from the centre outwards.

  9. Spread out your cheese, sausage, and onion, and then drop dollops of the fig paste around the pizza.

  10. Pull your thyme off the sprigs and sprinkle over the pizza.

  11. Bake for 5 - 10 minutes (depending on the heat of your oven) or until the crust is bubbly and browning.

  12. Let the pizza cool for 5 - 10 minutes before cutting into slices.
